HOK recommends .5-1 oz for a dark base and 1 oz for a light base. Generally if its black I use about .5 oz/quart, if it's not enough I add a little more.....remember, you can always add but you can't take it away, uh flakes that is. I had this freak cupcake baking incident a few years ago involving some chickens and a firehose and I wish I could take that back.....see that philosophy works in so many instances.
