Matte Black Help!

Hey all! This forum has been sooo helpful and great so I'm sayin' thanks in advance :) I'm pretty new and getting my bearings in the painting world, painting bicycles and having a blast!
Here's a current project:
I want to do glossy black stenciling under flat black. I've seen some great pictures on here of people doing glossy flames under a matte black finish and thats what I'm lookin to do! With no idea how to do this, we tried first spraying just a regular black, placing the stencils, and then spraying a matte clear over top (not my idea). The matte seemed to have adhered too much to the vinyl and as you went to peel it off, the black AND primer underneath peeled off as well. I kind of feel like there's gotta be a better way to achieve this...
Is there a way to mix a matte black? I felt as though simply spraying a matte clear over glossy stenciling wouldnt make the paint job durable enough...
We also used a high build primer for the first time and I'm not sure if maybe that had something to do with it as well...?
Also, is there a certain trick for spraying a matte clear or is the matte we have just really crappy? It seems to be getting gunked up in our gun and just comes out looking kinda sandy and crummy, in my opinion...not like a nice smooth matte but more like sand

Thanks again in advance everyone!!

Try Kirker black hot rod primer or sikkens rallye black . Both are a single stage matte black that you will like .

Try the matte black first, then do the graphics in one good gloss 'wet coat'.

Also, I have used Omni satin black which is fairly easy to spray. I'm sure the one scapegoat mentions are the same way.

They should be gunky. Maybe you just didn't shake or stir it enough?
Also, it's a good idea to spray two good WET coats. If you spray them dry, you will end up with streaking if you do larger panels.
This is no matter if you are spraying single stage or a bc/cc type matte finish.
Spray one coat, let it sit for 5-10 minutes. Then spray the next coat wet.

Below is a Jeep I sprayed last week.
Matte finish single stage paint
